Lucky for you, I have persevered for the both of us and found a recipe that is:

  • Naturally free of dairy

  • Reliably moist

  • And delicious every time

  • Bonus: it’s in muffin form, so it’s already pre-portioned!


I’ve made this quite a few times now, and not to give everything away, but the results are consistently delicious! Even dairy-eaters enjoy these dairy free cornbread muffins. They’re actually fully vegan too! Read on to find out how:

Loving It Vegan Cornbread Muffins

Dairy-Free Modifications:

None needed! This recipe is fully vegan and naturally free of dairy.

The recipe calls for soy milk but the author notes that almond milk works as well. I’ve consistently used bettergoods Original Almond Milk because that’s usually what I have in my fridge.

Procedures:

There is a preliminary step of “curdling” the plant milk to make more of a buttermilk substitute, which is as simple as adding apple cider vinegar to your plant milk. After that, it’s a simple quickbread muffin recipe, with mixing the dry ingredients and wet separately, then mixing, pouring into a muffin tin, and then baking.


Results

These golden muffins are a little sweet, perfectly tender, and hold up over a few days (if they last that long!).

You may want to eat them warmed with a slather of dairy free butter and/or maple syrup, but the muffin doesn’t need it.

Discussion

These muffins consistently come out sweet, with a slightly crispy edge and tender crumb on the inside. They last a while too, likely because of the combination of oil and “buttermilk.” Not that they will remain uneaten for long!

This recipe is naturally free of any dairy, requiring no substitutes for allergies. It’s also a fully vegan recipe, so it’s also naturally free of eggs. If you’re nut-free, choose a nut-free plant milk like soy or oat.

Future directions:

This cornbread would pair perfectly with chili, a hearty harvest beef stew, a side dish on Thanksgiving, or really a nice treat any time of year!
