Dairy-Free Pecan Pie Bites: A Mini Report
Good things come in small packages!
Therefore, I’ll take guidance from these mini desserts and keep this post brief, succinct, and sweet as well.
For the goodness of pecan pie, without the cloying stickiness and mess, consider mini pecan pie bites! A hybrid between pie and cookie, these pecan pie bites are delicious and much enjoyed by our families every Thanksgiving. But why limit yourself to one day of the year? These would be delightful at any holiday gathering, any time of year.
How can we make them dairy-free?
Method
Recipe source: Pecan Pie Bites from Ree Drummond, The Pioneer Woman
Dairy-Free Modification:
Instead of dairy whipping cream, I used Silk Heavy Whipping Cream Alternative. I used this both in the filling and as a garnish.
Procedures:
Follow along with the recipe, with the exception of making the substitute of whipping cream.
Essentially, the steps involve making the base, lining muffin tins with the base mixture (I used regular instead of mini, and doubled the recipe), making and adding the filling, and baking.
To garnish, I topped with more whipped cream.

These two-step mini pecan bites are always a delight, and I hope you will bake them too! The coolness of the whipped cream added a nice complement to the warmth of the nutty bite underneath. The ratio of base to filling is also really delicious, making this a less sticky, yet still tasty and traditional treat. All this, and free of any dairy!
As a bonus allergy-friendly aspect of this recipe, these pecan pie bites do not require any cutting in order to serve, reducing possible risk of cross-contamination often present at a holiday dessert table.
These mini pecan bites remind me that good things truly do come in small packages. Sometimes, distilling things down into their essences can really give you something that feels balanced between traditional and new.
But, to keep things short and sweet, we’ll wrap up here. Enjoy!
